The Païssels guardians are small, chestnut, traditionally used to support young vines pruned cup.
Vivien Roussignol and Marie Toussaint are in charge of this small vineyard located in Babeau, 5 km from Saint-Chinian village on shale hillsides. It is a family property which was created and maintained by generations of farmers. The estate has gradually specialized in the cultivation of the vine.
Passionate about wine and attached to these few hectares of vines rooted in the foothills of the Black Mountain, we decided to continue to make them live .
In 2011, our first vintage we vinified, taking 1 hectare family leased vineyards and 2 ha in 2012. Today we have 3 hectares and we hope to grow again. We take care of the vines as well as the wine and winemaking. For the harvest, we harvest by hand ... with family and friends!
