The Great Wines from Languedoc Roussillon
My cuvée "L'ivresse des Cimes" is made with the grapes coming from the steepest plots of my vineyard, located at the top of the hillside, where keeping balance begins to become particularly difficult.
It is an assemblage of three grape varieties, Mourvèdre, Grenache and Syrah.
● Vine side
Within my vineyard, completely classified as Appellation Saint Chinian, there are the 2 plots of Mourvèdre, 4 of Syrah and 3 of Grenache whose grapes go into the composition of "L'ivresse des Cimes".
The Grenache and Mourvèdre are grown in goblet, old fashioned.
The Syrah is cultivated with a high trowel, because its shoots have a falling port. We use this tying to straighten and order the shoots vertically, so that the photosynthesis is optimal, an essential factor to obtain a perfect maturity of the grapes.
Size of Grenache: from 5 to 7 coursons of two eyes per vine.
Size of the Syrah: short in Cordon de Royat, called "Omega".
Size of the Mourvèdre: very short, 3 coursons with two eyes per vine.
The grapes were harvested very ripe, by hand.
● Cellar side
When they arrive at the cellar, the grapes are immediately scraped off, then lightly crushed and poured into a vat.
Fermentation in tanks n ° 2, n ° 3 and n ° 5.
Hot maceration (about 25 ° c) in these same tanks for 4 weeks, with two daily pumpings.
Dewatering in October and assembly.
Raised in tank for more than 3 years, two rackings per year, no collage or filtration.
● In the glass
The wine is black and intense.
It delivers a sumptuous bouquet of berries red, blueberry and ripe, in the middle of scents of garrigue and spices.
The pulpit is fine, the tannins well satin, it persists elegantly in the mouth.
Potential for custody: 20 years and over
