The Sélection Élégance cuvée, produced by a group of wine-growers in the municipalities of Cébazan, Cruzy and Montouliers, is made from a blend of Syrah (80%) and Grenache Noir (20%). The plots of vines declared in AOP Saint-Chinian, which are at the origin of the creation of red wine, are located on hillsides with clay and limestone soils. The average yields of these plots do not exceed 40hl / ha.
Vinification and aging
Maceration of Syrah bunches is done traditionally for 10 to 15 days, in concrete tanks. Regular extraction operations of pumping-over and load shedding are carried out. For the Grenache Noir bunches, the maceration time is longer, and varies from 15 to 20 days, always in concrete tanks, with daily pumping-over and punching down operations. The two grape varieties will be blended subsequently.
Once the cuvée has been blended, the wine is aged in oak barrels of different heat. After a 12-month aging period, the wine is then bottled after a study and a selection of the best barrels.
This AOP Saint-Chinian red wine has an intense and deep color. Its complex nose combines fine aromas of blackberries, liquorice and vanilla, which are completed to finish with a delicate toasted note. In the mouth, the Sélection Élégance wine is generous, fleshy and made up of a beautiful structure. The tannins are silky and supple.
Serve on gravy dishes, game and character cheeses.
