"A beautiful family story ..." Lionel Belot, winemaker Château Belot

The wines of Château Belot are signed from a terroir, from a specific tenure in the vineyard of the domain. The Argillière comes from plots of Syrah and Grenache Noir established on bauxitic clay soil with gravel and sandstone. This multitude of soil types allows the winemaker to create an identity specific to each wine. "It is on these soils that each year, the vintages follow each other but are not alike", Lionel Belot.

For L'Argilière, a plot selection of the best Syrah, exposed due south, is made for each vintage. During the month of July which precedes the harvest, a green harvest is done to eliminate the surplus yields as well as the less qualitative bunches. This action also aims to bring the rest of the grapes on the stem to optimal maturity at the time of the harvest.
Then, destemming and manual sorting is orchestrated on the entire harvest upon arrival at the winery. Lionel then proceeds to a cold pre-fermentation maceration for 48 hours at a temperature of around 10 ° C. This operation makes it possible to delay the fermentation start of the tank, and thus, to extract in a softer and more delicate way all the particles contained in the skin of the grape (pigments, aromas, tannins ...). The two grape varieties go into fermentation separately. It lasts 30 days for Syrah and 25 days for Grenache. In both cases, a regulated temperature of 23 to 25 ° C is maintained throughout this fermentation period. Load shedding and pumping over with daily aeration are carried out during the first eight days of fermentation, then every ten days for a month.
The varietals once assembled, the cuvée is aged in oak barrels of one or two wines, for a period varying from 16 to 18 months.

This method of careful preparation and vinification allows L'Argilière to develop a great freshness and intensity of its fruity aromas on the nose and in the mouth. It is adorned with a pretty purple color dress with purple reflections. The nose is dominated by aromas of fresh red and black fruit, spices and menthol notes. The wood is made in this aromatic palette. It is found on the palate, during the tasting, with its contribution to the delicacy of the juice and tannins, which show themselves to be melted by this aging. The flesh is round, concentrated and pulpy in the heart of the mouth. The finish brings notes of liquorice and menthol.

It is necessary to put L'Argilière du Château Belot in a carafe, at least one hour before service. This action will promote the development of fruit aromas and the development of the cuvée. Be sure to taste this Saint-Chinian red wine at a temperature between 16 and 18 ° C.

The L'Argilière cuvée from Château Belot goes wonderfully with a hare stew with garrigue herbs. Grilled red meats or roasted poultry can also be combined with its delicious notes of fruit and spices.
